Pistachio Vanilla Protein Ice Lollies - creamy, refreshing & plant-based

Craving an ice cream that not only tastes amazing but also gives you a boost of plant-based protein? These homemade pistachio vanilla protein lollies are your new go-to summer hack. Cool, creamy, satisfying - and completely free from animal ingredients or overpowering sweetness.

Whether it’s a post-workout treat, a refreshing dessert, or just a hot day pick-me-up - this recipe proves that high-protein snacks can be fun too.

Ingredients (makes approx. 6 ice lollies):

  • 50 g soaked pistachios (or pistachio butter)

  • 100 g unsweetened soy yoghurt

  • 200 ml soy milk

  • 35 g WAM Protein - Pure Vanilla

  • Optional: sweetener of choice (e.g. agave syrup, date syrup, sugar or erythritol)

How to make them:

  1. Add the pistachios (or butter), soy yoghurt, soy milk, WAM Protein, and sweetener to a blender.

  2. Blend until smooth and creamy.

  3. Pour into ice lolly moulds and freeze for at least 4–6 hours (ideally overnight).

  4. Take them out, let them soften for a minute - and enjoy!

Variations and tips:

  • Not a pistachio fan? Swap them for almond butter, cashew butter, or peanut butter - they all work.

  • Want to take it up a notch? Dip the frozen lollies in melted dark chocolate and sprinkle with chopped pistachios, cacao nibs, or toasted coconut flakes.

  • No lolly moulds? Use small yoghurt pots or an ice cube tray - a wooden stick is all you need.

  • Prefer scoopable ice cream? Use an ice cream maker (if you have one), or freeze the mixture in ice cube trays and blitz in a high-speed blender.

One last reminder:

Not every snack has to be “high protein” - and not every ice cream needs to be optimised. These lollies are a delicious, nutrient-packed option - but of course, you can also just enjoy a classic ice cream without guilt. Balance beats perfection. Always.
