Ingredients

1 ripe banana

2 tbsp maple syrup

70 g flour (wholegrain or plain - whatever works for you)

1 tsp baking powder

1 tsp cocoa powder

1 pear (ripe but not mushy)
Method
1. Mix the base
In a bowl, mash the banana and add maple syrup.
Add the flour, WAM Protein, baking powder and cocoa powder.
Mix until you get a crumbly dough - it may look dry at first, but don’t worry. It comes together once the pear joins the party.
2. Add the pear
Cut the pear into small cubes and fold it into the mixture.
Stir until everything forms a thick, firm batter.
3. Bake
Divide the batter between 4 muffin tins.
Bake at 180 °C for around 15 minutes, or until the tops are slightly cracked and the kitchen smells like a cosy autumn café.
