Vegan Protein Muffins with Pear: Perfect for Autumn

Pears are really underrated! Especially in baking, where their sweet and slightly spiced flavour truly comes to life – perfect for autumn treats. So why not try a batch of juicy protein muffins with pear and our vegan WAM Protein while pears are in season? These delicious, protein-rich muffins are ideal as a snack or dessert and pack in a good dose of plant-based protein.

Ingredients for 4 Delicious Protein Muffins:

  • 1 ripe banana (for sweetness)
  • 2 tbsp oat milk (or other plant-based milk)
  • 1 tbsp brown sugar
  • 35g oat flour (you can blend oats in a mixer)
  • 35g plain flour
  • 40g WAM Protein Banana Bread (or use Chocolate Hazelnut for a chocolate version)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1 pear, chopped into small cubes

Instructions for the Protein Muffins:

  1. Prepare the batter: Add all ingredients, except the pear, to a large bowl and mix well until a crumbly texture forms. Mash the banana with a fork to help incorporate it smoothly into the mixture.
  2. Fold in the pear: Add the diced pear and mix again. The juice from the pear will help create a firm, smooth dough.
  3. Fill the muffin tins: Evenly distribute the mixture into four muffin cases and press down gently to give the muffins a nice shape.
  4. Bake: Bake the muffins at 180°C (fan oven) for about 25 minutes, until golden and super juicy. Let them cool after baking.
