Ingredients (for 2 cookies)

120 g applesauce

35 g peanut butter (or any nut or seed butter you enjoy)

½ tsp baking powder
-
20 g oats (blended into flour works best)

15 g dark chocolate chips
Optional:
Sweetener of your choice (maple syrup, agave, sugar, etc.), depending on how sweet you like your bakes.
Heads-up: These cookies are intentionally not very sweet. Taste the dough before baking and adjust if needed - your kitchen, your rules.
Method
1. Mix the dough
Add all ingredients to a bowl and mix until a thick, sticky dough forms.
If the dough feels too dry, add a splash more applesauce. If it’s very sticky, let it rest for a minute - the oats will absorb some moisture.
2. Shape
Divide the dough into two balls.
Place each ball between two baking sheets and gently press into a cookie shape.
3. Bake
Bake at 180 °C for 10–15 minutes, either in the oven or air fryer, until the edges are set and lightly golden.
Let them cool slightly before eating - they firm up as they rest.
