Ingredients

30g (approx. 2 tbsp) WAM Vegan Vanilla Protein: This provides a satisfying protein base and a smooth vanilla flavour.

50g Shredded Coconut (Fine): For that classic, chewy texture. Keep a little extra to the side for rolling!

30g Almond Flour: This acts as our binder, helping to bring the wet and dry ingredients together into a dough.

1 tbsp Maple Syrup or Agave: Because our protein powder is naturally balanced and not overly sweet, you get to control the sugar levels here. Add a drop more if you have a sweeter palate.

6-7 tbsp Coconut Milk: To bring the mixture together and add a touch of creaminess.
Method
- Mix the base: Add all of your dry ingredients (the WAM protein, shredded coconut, and almond flour) to a mixing bowl. Pour in the maple syrup and coconut milk, and stir well.
- Bring it together: Keep mixing until everything sticks together nicely to form a dough-like consistency. If it feels a little too crumbly, add a tiny splash more coconut milk.
- Roll them out: Take small sections of the mixture and roll them into snack-sized balls between your palms. (Pro tip: If the mixture is sticking to your hands, lightly dampen your palms with water first!)
- The finishing touch: Scatter your leftover shredded coconut onto a plate and gently roll each ball until it has a nice, even coating. Pop them in a container and store them in the fridge.
