Ingredients for the Sweet Potato Brownies:

400 g cooked sweet potato

60 g WAM Chocolate Hazelnut Protein powder

60 g oat flour
-
80 g peanut butter
-
4 tbsp cocoa powder
-
160 ml oat milk
-
2 flaxseed eggs (2 tbsp ground flaxseed + 6 tbsp water)

3 tbsp maple syrup (or another sweetener, optional)

2 tsp baking powder
-
50 g dark chocolate chips
Tip: You can substitute the chocolate chips with nuts or dates if you want to mix things up!
Preparation:

Mash the cooked sweet potato with a fork or blend it in a food processor until smooth and creamy.

In a large bowl, mix all the dry ingredients (oat flour, protein powder, cocoa powder, baking powder) thoroughly.

Add the remaining ingredients (peanut butter, oat milk, maple syrup, flaxseed eggs) to the mashed sweet potato and combine until you have a smooth batter.

Gently fold in the chocolate chips, saving a few for decoration.

Pour the batter into a brownie tin lined with parchment paper and smooth the top.

Bake at 180°C (356°F) for about 20 minutes. The brownies will remain soft and fudgy inside.

Let the brownies cool completely before cutting them into pieces.
