Sweet Potato Protein Brownies - Vegan & Delicious

Moist, chocolatey brownies that are not only incredibly tasty but also packed with nutrients and healthy – doesn't that sound perfect? Our sweet potato brownies are full of fibre, protein, and vitamins, all while being completely vegan.

With our WAM Chocolate Hazelnut Protein, you can whip up these delicious brownies that:

Ingredients for the Sweet Potato Brownies:

  • 400 g cooked sweet potato

  • 60 g WAM Chocolate Hazelnut Protein powder

  • 60 g oat flour

  • 80 g peanut butter

  • 4 tbsp cocoa powder

  • 160 ml oat milk

  • 2 flaxseed eggs (2 tbsp ground flaxseed + 6 tbsp water)

  • 3 tbsp maple syrup (or another sweetener, optional)

  • 2 tsp baking powder

  • 50 g dark chocolate chips

Tip: You can substitute the chocolate chips with nuts or dates if you want to mix things up!

Preparation:

  1. Mash the cooked sweet potato with a fork or blend it in a food processor until smooth and creamy.

  2. In a large bowl, mix all the dry ingredients (oat flour, protein powder, cocoa powder, baking powder) thoroughly.

  3. Add the remaining ingredients (peanut butter, oat milk, maple syrup, flaxseed eggs) to the mashed sweet potato and combine until you have a smooth batter.

  4. Gently fold in the chocolate chips, saving a few for decoration.

  5. Pour the batter into a brownie tin lined with parchment paper and smooth the top.

  6. Bake at 180°C (356°F) for about 20 minutes. The brownies will remain soft and fudgy inside.

  7. Let the brownies cool completely before cutting them into pieces.

Can I substitute the ingredients?
Yes! You can replace oat flour with almond flour or swap maple syrup for agave syrup or coconut sugar—or leave out the sweetener entirely. The chocolate chips can also be replaced or supplemented with chopped nuts.

Can I store the brownies?
The brownies will stay moist in the fridge for up to 5 days.

Why use sweet potatoes in brownies?
Sweet potatoes provide natural sweetness, a chewy texture, and more fibre and vitamins compared to white flour.
