Ingredients for Pumpkin Spice Overnight Oats

To make this overnight oats recipe, you'll need just a few simple ingredients you probably already have in your kitchen:

  • 40g oats
  • 30g WAM Protein Banana Bread
  • 100g pumpkin purée (best if made from fresh pumpkin)
  • 1 tbsp chia seeds
  • 1 tsp cinnamon or pumpkin spice (you can also add nutmeg if you like)
  • 1 tbsp agave syrup or maple syrup
  • 200–250ml oat milk (depending on your preferred consistency)

Preparation

  1. Mix the oats, protein powder, pumpkin purée, chia seeds, cinnamon (or pumpkin spice), and syrup in a bowl or jar.
  2. Add the oat milk and stir well until everything is combined smoothly.
  3. Cover and refrigerate overnight (at least 6 hours to let the oats absorb the liquid).

The Next Morning

In the morning, enjoy your Pumpkin Spice Overnight Oats straight from the jar or add your favourite toppings. Here are some ideas:

  • Fresh apple, figs, plums, or other seasonal autumn fruits
  • Yogurt (for extra creaminess, vegan if you prefer!)
  • Nuts, seeds, or pumpkin seeds
  • A little extra syrup or cinnamon

This recipe is not only easy but also super versatile. You can switch up the toppings and spices to suit your taste.

Additional Preparation Tips

  • Homemade Pumpkin Purée: If you're using fresh pumpkin, wash it, remove the seeds, peel, cut into pieces, and simmer in a pot with some water for 15 minutes until soft. Then purée it. Alternatively, halve the pumpkin, scoop out the seeds, and bake it skin-side up for 45 minutes at 180°C. After cooling, you can easily remove the skin and purée the flesh. Voilà – pumpkin purée ready!
  • On the Go: If you like, you can prepare the oats directly in a screw-top jar to make it easy to grab and take with you the next day.
  • Toppings: Add your favourite toppings to personalise your breakfast. Whether it's fresh fruit, nuts, or extra syrup – there are endless ways to make this recipe your own.

With this Pumpkin Spice Overnight Oats recipe, you’ll start your day healthy and delicious. The combination of pumpkin, oats, and spices gives you that perfect autumn flavour while providing the energy you need. Give it a try and show us your results on Instagram or Facebook!
