Protein Muffins Recipe with Blueberries

Ingredients for the recipe (makes 4 muffins):

  • 80 g flour

  • 65 g almond flour

  • 1 teaspoon baking powder

  • 1 ½ teaspoons vanilla extract

  • 60 g WAM Protein Powder – Banana Bread

  • 200-240 g soy milk (depending on the size of the banana)

  • 1 ripe banana (natural sweetness)

  • 80 g blueberries (fresh or frozen)

Tip: For extra sweetness, add agave syrup, maple syrup, or chocolate.

Preparation: How to make perfect protein muffins

  1. Preheat the oven to 180°C (top and bottom heat).

  2. Mash the banana with a fork.

  3. Mix the dry ingredients: flour, almond flour, WAM protein powder, baking powder, and vanilla in a bowl.

  4. Whisk the wet ingredients: mashed banana with soy milk.

  5. Combine the wet and dry ingredients, stirring slowly until a thick batter forms. If necessary, add a little more soy milk.

  6. Gently fold in the blueberries so they do not break apart too much.

  7. Divide the batter evenly into 4 muffin moulds.

  8. Bake for 18-20 minutes in the centre of the oven.

  9. Perform the toothpick test: if it comes out clean, the muffins are ready.

  10. Remove from the oven, allow to cool, and enjoy.
