Protein Lemon Bars – Vegan, No-Bake, with a Hint of Vanilla

Ingredients (makes approx. 6 bars)

For the base:

  • 100g ground almonds

  • 60g WAM Protein Pure Vanilla

  • 40g maple syrup or agave syrup

  • 45g almond butter (or peanut butter)

  • Juice of one fresh lemon

For the topping:

  • 100g plant-based yoghurt (e.g. soy yoghurt)

  • 15g WAM Protein Pure Vanilla

  • Zest of an unwaxed lemon

Method:

  1. Make the base:
    In a large bowl, mix the ground almonds, protein powder, syrup, nut butter and lemon juice. Knead until you get a smooth, slightly sticky dough. If it feels too dry, just add a splash of water.

  2. Prepare the tin:
    Line a small baking dish or flat container with baking paper. Press the dough into the dish and smooth out the top.

  3. Mix the topping:
    In another bowl, mix the plant yoghurt, protein powder and lemon zest until smooth and creamy. Spread evenly over the base.

  4. Chill:
    Place in the freezer for at least 30 minutes until set. Then slice into bars.

Storage & serving tips

These bars store brilliantly in the freezer. Just leave them to soften at room temperature for around 30 minutes before eating—they’ll be cool, soft, and perfect for snacking.

They’re great post-workout, as a quick breakfast, or when you need something sweet but nutritious.
