Ingredients (makes approx. 6 bars)
For the base:

100g ground almonds

40g maple syrup or agave syrup

45g almond butter (or peanut butter)

Juice of one fresh lemon
For the topping:

100g plant-based yoghurt (e.g. soy yoghurt)

15g WAM Protein Pure Vanilla

Zest of an unwaxed lemon
Method:

Make the base:
In a large bowl, mix the ground almonds, protein powder, syrup, nut butter and lemon juice. Knead until you get a smooth, slightly sticky dough. If it feels too dry, just add a splash of water. -
Prepare the tin:
Line a small baking dish or flat container with baking paper. Press the dough into the dish and smooth out the top. -
Mix the topping:
In another bowl, mix the plant yoghurt, protein powder and lemon zest until smooth and creamy. Spread evenly over the base. -
Chill:
Place in the freezer for at least 30 minutes until set. Then slice into bars.
