Our recipe for fudgy chickpea blondies – vegan, quick, easy to make, and with extra protein!
If you're looking for a tasty, healthy, vegan, and protein-packed snack, you're in the right place! Our protein chickpea blondies don’t taste like chickpeas or legumes at all – we promise! They’ll remind you more of a fudgy chocolate chip cookie dough. And the best part? They’re super easy to bake!
Ingredients for fudgy protein chickpea blondies:
- 400g chickpeas from a can or jar, drained and well-rinsed
- 60g oats (or ground oats)
- 70ml agave syrup or maple syrup
- 125g peanut butter (alternative: almond or cashew butter)
- 60g WAM protein powder (Banana Bread flavour)
- 100ml plant milk (e.g. oat milk)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp baking powder
- 75g dark chocolate chips (plus a few extra for sprinkling)
How to make chickpea blondies:
- Preheat the oven to 180°C (fan/gas mark 4).
- Rinse the chickpeas very well and drain them. This step is important to get rid of the typical chickpea flavour.
- Blend all the ingredients except for the chocolate chips in a food processor until smooth. If you don’t have a food processor, you can first blend the chickpeas and oats in a tall container with a hand blender and then mix with the remaining ingredients. The batter should be sticky and dense – don’t add more plant milk!
- Fold in the chocolate chunks and press the mixture into a lined baking tin. Smooth the top and sprinkle with extra chocolate chips if desired.
- Bake for about 20-25 minutes, until the blondies are golden on top. Check with a skewer: the batter should stay fudgy!
- Remove the blondies from the oven and let them cool completely before cutting them into equal squares.
