Vegan Cinnamon Roll Protein Cookies

Who says cookies have to be full of sugar and low in protein? With this recipe for vegan protein cookies, you can enjoy a sweet treat while getting a boost of protein. Thanks to our versatile WAM Protein, these cookies are vegan, high in protein, relatively low in calories, and perfect for the colder months.

Ingredients (for approximately 10 protein cookies)

  • 130 g of wheat flour
  • 60 g of WAM Protein powder Banana Bread flavour
  • 150 ml of plant-based milk (e.g., oat milk or almond milk)
  • 2 tbsp of coconut oil (melted in the microwave)
  • Agave syrup or maple syrup
  • Ground cinnamon

Method

  1. Combine all ingredients except the cinnamon in a bowl. Add 2 tbsp of agave syrup or maple syrup, mix everything well, and taste the dough. If it’s not sweet enough, add more sweetener. Once it’s to your liking, knead the dough with your hands until smooth and pliable.
  2. Roll out the dough on a floured surface or directly on a sheet of baking paper to about 3 mm thick.
  3. Generously sprinkle the dough with ground cinnamon, adjusting to your preference.
  4. Roll the dough into a firm log. Then, slice the log into pieces about 8 mm thick.
  5. Place the cookies on a baking tray lined with baking paper and bake in a preheated oven at 180°C (fan) for 10–15 minutes until golden brown. Keep an eye on them to prevent burning.
  6. Let the cookies cool completely on a wire rack to ensure they become crisp.

Variations and Tips

  • Glaze: Mix icing sugar with a little plant-based milk, vanilla, and a splash of lemon juice to create a glaze. Brush it over the cookies once they’ve cooled.
  • Twist: Spread a thin layer of nut butter (e.g., cashew or peanut butter) over the dough before sprinkling with cinnamon for a delicious variation.
