Apple Pie Baked Oats: A Vegan Apple and Cinnamon Treat

Baked oats are all the rage right now – and for good reason! With this recipe, you’ll not only enjoy a good dose of fibre but also a generous serving of protein. Perfect for a cosy breakfast or a snack throughout the day.

Our recipe combines the warming flavours of apple and cinnamon with baked porridge, offering you a nutritious and healthy breakfast or a delicious snack. Thanks to our WAM Protein Banana Bread, it’s vegan, quick to prepare, and easily customisable.

Ingredients for the Baked Oats

  • 1 ripe banana
  • 200 ml (plant-based) milk
  • 40 g oats
  • 1 tsp ground flaxseed
  • 1/2 tsp vanilla extract
  • 30 g WAM Protein Banana Bread
  • 1 apple
  • Cinnamon
  • Agave or maple syrup (optional, for sweetness)

Preparation

  1. Preheat the oven to 180°C (fan or conventional).
  2. Mash the banana in a bowl. Add the milk, oats, flaxseed, vanilla extract, and WAM Protein. Stir well until smooth.
  3. Pour the mixture into an oven-safe dish.
  4. Slice the apple into thin pieces or small cubes (no need to peel) and spread them evenly over the top. Sprinkle generously with cinnamon and, if desired, drizzle with agave or maple syrup.
  5. Bake the mixture for 20–25 minutes at 180°C until the apple pieces are golden.
  6. Let the baked oats cool slightly and enjoy them warm – either straight from the dish or sliced into portions.

Tips and Variations for Baked Oats 

  • Microwave Option: If you’re in a rush, you can prepare this recipe in the microwave. Simply cook for 5–6 minutes on high power until the apples are tender. The texture will be softer than when baked in the oven.
  • Texture: This base recipe yields a soft texture. If you prefer a firmer consistency (e.g., for slicing as a snack), use less milk (around 150 ml) or a mix of milk and yoghurt. You can also add 1/2 tsp of baking powder for a firmer bake.
  • Storage: This recipe makes one meal-sized portion. If it’s too much or you want to prep ahead, store the baked oats in the fridge for up to 3-4 days and reheat as needed.
  • Variations: Experiment with other fruits like pears instead of apples, or add chopped almonds, walnuts, or chocolate chips. You can also replace the maple syrup with other sweeteners or mix it directly into the batter. For baked oats without banana, swap it for apple purée.
